Teacher Appreciation Week

Last week was teacher appreciation week, so I decided to do something nice like make cupcakes for the teachers at my school.

I bought what I needed Thursday night – around 9pm or so. Cake boxes, yes I cheated, again 😦

It was still a challenge though, as I made 50 cupcakes. My parents recently bought be a Betty Crocker book that is all about cupcakes and other desserts, basically it’s a recipe book. I chose the Caramel Cappuccino Cupcakes recipe, but I changed things up a little. Just like the last time that I baked I forgot to take enough pictures BUT I do have some of the most important ones 🙂

I baked both vanilla and devil's food cake cupcakes, just so that the teachers could choose which they'd like to eat better.

I couldn't find any individually wrapped caramel filled chocolates so i bought this candy bar instead, which happens o have a caramel filling. it was pretty sticky having to break up the pieces, though.

This honestly has to be one of my favorite cupcake frosting flavors of all time. I didn't follow the recipe that was in the book, I actually found a recipe online so this was made using creme cheese, butter, sugars, and coffee liquor.

Coffee Cake Muffins

School food, it could taste better. The coffee cake the give out for breakfast though, now that’s to die for!

 

I found a recipe that comes pretty close to tasting like the one from school. Unfortunately, this time I forgot to take pictures of every step but I have included the ones that I took 🙂

Pour the canola oil, milk, and eggs mixture into the flour, sugar, baking powder, cinnamon, baking soda and salt combination.

Cover the cupcakes with crumbs before you put them into the oven, be careful though because the cupcakes rise and they'll end up looking like mine - it's fixable.

I almost always have one or to mishaps when it comes to baking.But of course, practice is fun and it helps!  I was happy to see that some of these muffins did come out pretty.

I glazed the top as it said in the recipe, but I would recommend that you skip this step, as the muffins taste better without it!

It doesn’t hurt to add something different like walnuts into the batter or onto the crumb topping! Changing little things makes it all more fun 🙂

Tiramisu Thursday

Tiramisu, a very easy to make Italian dessert.

This dessert consists of very simple ingredients such as:

  • Marscapone
  • Egg yolk
  • Egg whites
  • Sugar
  • Lady fingers
  • Cocoa powder
  • Coffee

Personally, I love coffee and mocha cakes, drinking lattes, and anything that has to do with caffeine! 😉

If you share this same interest, you’ll love tiramisu. The recipe that i used for this is from a video on YouTube , I found that this was the easiest recipe but it was also kind of confusing as he does not thoroughly explain the whole process.

You're going to need four eggs. Separate the egg yolks from the egg whites and place them in small bowls.

Measure one cup of sugar.

Move egg yolks into a bigger bowl and add ONLY 1/2 cup of sugar to them

Whisk the egg yolk and sugar mixture until it's a creamy yellow

Add the marscapone cheese to the egg yolk mixture until you get it to this consistency, it's very soft and creamy, again a light yellow color

Next, put your egg whites into a larger bowl and beat them until you get them to soft peaks.

Gradually add the other 1/2 cup of sugar into the egg whites and beat them to the stiff peaks stage.

Place the egg white mixture on top of your marscapone and egg yolk mix.

Don't mix both together. Simply fold them over each other and eventually they'll be incorporated.

Quickly dip your lady fingers into 2 cups of coffee one at a time. It's important that you don't keep them in there for too long because they get soggy very quickly.

Line up your coffee dipped lady fingers into a container, then place some of the marscapone mixture over them, spread it evenly. Once you have done that, sprinkle some cocoa power over it. Continue these steps with the second layer.

Leave your tiramisu in the refrigerator for at least 3 hours, then it's ready to eat.  Be aware, cocoa powder can be a bit bitter to some people, try not to top it off with too much!

This recipe is one of the easiest to do and one of the most delicious to make, Enjoy 🙂
